Cognac kann man nicht nur trinken. Pascal Nebout, Chefkoch im Hotelrestaurant "Château de l’Yeuse" in der Region Cognac verrät uns eines seiner Lieblingsrezepte mit dem französischen Weinbrand. Cognac ist nicht nur ein Weinbrand, sondern auch der Name der Region, in der er gebrannt wird. Sie befindet sich im Südwesten Frankreichs. In der Nähe der Stadt Cognac befindet sich das luxuriöse Hotelrestaurant "Châteux l'Yeuse" - ein Treffpunkt für Gourmets. Zutaten 1/2 Liter Milch 30 Gramm Mehl 6 Eier 300 Gramm Zucker 10 cl Cognac 20 Gramm Stärke Zubereitung Als erstes die Eier trennen und die Eigelbe mit der Hälfte des Zuckers (125 Gramm) schaumig rühren. Dann das Mehl und die Stärke zufügen und alles zu einem glatten Teig verrühren. Die Milch kurz aufkochen lassen und nach und nach zu dem Mehl-Eiergemisch hinzufügen, damit das Eigelb nicht gerinnt. Dann alles in den Topf geben und unter ständigem Rühren noch einmal kurz aufkochen lassen. Anschließend den Teig eine Stunde kalt stellen. Erst jetzt die Eiweiße zusammen mit dem Zucker steif schlagen. Der Tipp von Pascal Nebout: drei Körner grobes Meersalz hinzufügen, damit der Eischnee fester wird. Anschließend 5cl Cognac erwärmen und zu der kalten Teigmasse hinzufügen. So wird der Teig wieder geschmeidiger. Schließlich den Eischnee nach und nach und vorsichtig unter die Teigmasse heben. Die Soufflé-Förmchen einfetten und mit Zucker bestreuen. Beim Einfüllen der Teigmasse darauf achten, dass der Rand sauber ist, sonst geht das Soufflé nicht gleichmäßig auf. Bei 200 Grad für 15 Minuten backen. Vor dem Servieren, mit Cognac beträufeln und flambieren. Guten Appetit!

Valgan tópicos y lugares comunes, sobre todo cuando no dejan de ser tan ciertos como en esta entrega de En Jaque. Se levanta el telón de una charla que promete sin duda ser de las más apasionantes que hemos vivido frente a nuestro estático y mudo tablero. Dos de los más grandes escritores de la literatura española se encuentran sentados en la mesa con sus dedos prestos para mover ficha y su verbo vivo y acertado. Ellos son Vicente Molina Foix y Alvaro Pombo. Sin más preámbulos comienza la partida con un sutil movimiento de Vicente al que responde tímidamente Alvaro. La literatura se abre paso sin dudarlo un momento y sin ningún juego de artificio. La excusa en la que toma forma el título del último libro de Molina Foix, Con tal de no morir. Un título sugerente donde los haya y que inevitablemente pide una reflexión filosófica al respecto de muchas cosas. Uno escribe para no morir nunca, entre otras razones. La literatura quizá sea una forma de extensión de la vida. La inmortalidad del escritor, del texto, es algo que siempre está presente, aunque no sea algo que uno busca a proposito. También es un acto de vida, porque como decía Santo Tomás de Aquino, el acto del entendimiento es vida. Para desengrasar un poco un tema de menos calado, la necesidad de publicar y la edad con la que uno empieza hacerlo. Vicente fue un autor que comenzó pronto su carrera literaria. Alvaro, por el contrario, tardó más tiempo en publicar, aunque ahora se ha convertido en uno de nuestros autores más prolíficos. Los límites de la lengua son los límites de mi mundo, decía el autor. ¿Por qué escribimos en una lengua o en otra? Más allá del conocimiento de la lengua materna (es evidente que algunos autores conocen a la perfección otros idiomas), ¿cuál es la razón de que nos sintamos más cómodos usándola? Incluso comercialmente el uso de otras lenguas, quizá el inglés, puede tener una razón de ser mayor que cualquier otra. Sin embargo, usamos la nuestra de un modo casi localista. Quizá el motivo sea, como apunta Alvaro, la instintividad que nos proporciona su uso, frente a otras aprendidas más allá del nacimiento. Quizá también para escribir en una lengua uno ha de vivir donde su uso es continuado. Otros géneros literarios más allá de la novela saltan al ruedo en esta última parte del programa. El género dramático. Un género quizá denostado y donde no hay demasiados autores que se prodiguen. Puede que imponga un respeto, un miedo al salto que se produce cuando es representado y sale del papel. También las películas, los guiones, es en el fondo un texto literario. O dicho de otra manera, una manera de narrar distinta, de contar historias, a la que muchos escritores no son ajenos del todo. El propio Vicente es un escritor que coquetea en ocasiones con el cine. Hay dos tipos de escritores En general, hay dos tipos de personas: el viajero y el sedentario. Uno es la antítesis del otro y se opone fervientemente a su filosofía de vida. Aunque como comprobaremos en esta segunda parte del programa, no son tan incompatibles como ellos creen. Alvaro Pombo pertenece al grupo de los escritores sedentarios. Vicente Molina Foix al de los viajeros incansables. El viaje como necesidad vital o la ausencia de él, también como necesidad vital, serán la columna vertebral de esta segunda parte de la conversación. Vicente es un hombre al que el viaje le emociona. Cualquier viaje, no sólo el gran viaje. Le emociona ir a Cercedilla y le emociona ir a la India. Cuando se habla del viaje, casi de manera inevitable uno tiene que hablar de su lugar de origen. De ese lugar donde uno tiene las raíces, de ese lugar del que uno trata de deshacerse en ocasiones, pero que tira más de lo que parece. La conversación se va pincelando de una manera suave y el viaje deja paso a la faceta de ambos escritores como articulistas en prensa y por extensión a la propia prensa. Ambos son unos viciosos, como ellos mismos se describen, de los periódicos. Aunque a ninguno de los dos le apasiona su lectura por Internet y aún prefieren disfrutar de pasar las hojas en un papel.
